Apricot Glaze Tenderloin

Apricot Glazed Tenderloin

Ingredients:

1 lb Tenderloin (cut cross wise about ½ inch thick)
2 Tablespoons of Sesame Oil
1 ½ cups of Apricot Preserve
¼ cup of Soy Sauce
1 tablespoon of minced ginger
Salt and Pepper

Directions:

Season both sides of the cut tenderloin with salt and pepper.  Heat oil in large skillet on medium-high heat and sear both sides of the tenderloin.  Mix Apricot Preserve, soy sauce and ginger together.  Pour into skillet and cook with tenderloin until it is cooked through and sauce is reduced.  Serve with rice and vegetables.
